Our Story

We are Elli and Myron from Agia Varvara, Heraklion, Crete, proudly carrying forward a longstanding tradition of agricultural production on the island. For many years, we have specialized in producing premium extra virgin olive oil and olives. Our golden treasure, Eliama Daily Value, is an authentic extra virgin olive oil celebrated for its exceptional quality both in Greece and internationally. Eliama Daily Value Gold and Eliama Daily Value Premium have been recognized and awarded since 2016 for their finest quality and healthy composition by national and international bodies and competitions.

Eliama Daily Value Gold is cherished by our customers as a nutritional supplement and health enhancer, known for improving well-being and reducing the risk of serious health concerns, including neurodegenerative diseases.  Eliama Daily Value Premium, distinguished by its fruity aromas, subtle bitterness, and spicy finish, is highly sought after by chefs, renowned restaurants in Greece and Crete, and connoisseurs of extra virgin olive oils worldwide.

From March to October, we warmly welcome visitors to our premises in Agia Varvara, just 30 km from the center of Heraklion, for healthy and premium olive oil tasting sessions. These experiences provide an opportunity to share our passion and expertise in extra virgin olive oil. Many of our guests leave not only as enthusiasts but as valued friends. Olive Cultivation process

With respect to the nature we raise the crops using techniques and processes that are based on the principles of biological agriculture and sustainable development. The harvesting and gathering is done completely by hands. Once the daily harvest is over, during the next 12 hours , we wash and clean the olives fruits just before we transport them for the extraction of olive oil.

Cultivation Practices

With great respect for nature, we cultivate our crops using techniques grounded in the principles of organic agriculture and sustainable development. Harvesting is done entirely by hand to ensure minimal impact on the environment and the highest quality yield. Once the daily harvest is complete, within the next 12 hours, we meticulously wash and clean the olives to prepare them for the olive oil extraction process.

Our Team

Cold Press Extraction

Our extraction process is purely mechanical, free from any chemical products or additives, ensuring our extra virgin olive oil remains 100% pure and natural. The temperature during extraction is carefully maintained below 24-25°C (cold press) to preserve the olive oil’s valuable properties, such as polyphenols and antioxidants, as well as its rich color, exquisite taste, and delicate aromas.

Storage

Immediately after extraction, the olive oil is collected and stored in specialized tanks under a nitrogen atmosphere to prevent oxidation. These tanks are housed in a temperature-controlled environment, kept steady at 12-15°C throughout the year, ensuring the oil’s quality and freshness are preserved.

Filtering & Bottling process

Our filtering and bottling processes are carried out using state-of-the-art equipment by trusted
and E.U certified partners, adhering to strict health and safety standards. To guarantee
maximum freshness, we bottle our Eliama extra virgin olive oil only after an order is placed. The
bottling is conducted in a specialized facility. This ensures that every bottle is delivered to you
with its quality and integrity perfectly preserved.

A Gift from Nature

Cultivation

At Elli’s Farm, we follow eco-friendly cultivation practices, avoiding chemical fertilizers and herbicides. We honor our land by respecting its natural ecological balance.

Harvesting

Our olives are harvested in November, at their prime for preserving natural flavors and healthful compounds like polyphenols and oleocanthal. Picking them slightly unripe ensures maximum aroma and nutritional value.

Standardisation

We package our olive oil in specially designed colored glass bottles to protect it from light and preserve its quality.
